Abstract
ABSTRAK
Mikroenkapsulasi ekstrak air daun belimbing wuluh digunakan untuk mempertahankan senyawa aktif didalamnya. Penelitian dilakukan dengan tujuan: (1) Mengetahui kualitas mikroenkapsulasi ekstrak air daun belimbing wuluh dengan metode spray drying; (2) Mengetahui pengaruh dosis mikroenkapsulasi ekstrak air daun belimbing wuluh terhadap kualitas ikan kembung.
Tahapan penelitian meliputi preparasi sampel yang terdiri dari pencucian sampel dan pengeringan. Pemisahan menggunakan metode Ekstraksi maserasi. Pembuatan serbuk mikroenkapsulasi yang terdiri dari proses homogenasi, mikroenkapsulasi dengan Spray Driyer, uji kualitas serbuk mikroenkapsulasi dengan mengetahui nilai kadar air, nilai aktivitas air, nilai uji kelarutan dan uji tanin serbuk mikroenkapsulasi. Aplikasi terhadap ikan Kembung dengan metode Total Plate Count dengan menggunakan dosis 1.4%, 2.1%, 2.8%, 3.5% dan 4.2% pada hari ke-0,ke-1, ke-2 dan ke-3. Mengukur kadar air ikan kembung hasil perlakuan, dan hari dan dosis terbaik dilakukan uji kadar protein ikan Kembung dengan metode Kjeldahl.
Data yang diperoleh dari hasil penelitian menunjukkan bahwa kualitas serbuk mikroenkapsulasi ekstrak air daun belimbing wuluh menggunakan bahan penyalut maltodektrin dan dikeringkan dengan Spray Dryer memberikan kualitas serbuk mikroenkapsulasi yang baik, dengan nilai aktivitas air 0.453, nilai uji % zat terlarut yaitu 99.9998%, serta nilai kadar airnya 6.726%. Serbuk mikroenkapsulasi ekstrak air daun belimbing wuluh dosis 4.2% hari ke-0 menunjukkan kemampuan terbaik dalam menghambat total bakteri yakni 0.79 x105 sedangkan pada dosis 4.2% hari ke-1 yaitu 14.55x105 dan sudah tidak memenuhi standar nilai TPC ikan segar. Serta dengan adanya pemberian serbuk mikroenkapsulasi pada ikan perlakuan dapat menghambat kerusakan protein.
ABSTRACT
Microencapsulation of cucumber tree leaves water extract to maintain the active compounds in it. The research aimed at (1) knowing the quality of microencapsulation of cucumber tree leaves water extract with spray drying method (2) knowing the influence of microencapsulation dose influence of cucumber tree leaves water extract to the mackarel fish quality.
The research stages included the samples that consist of sample cleaning and drying. The separation by using maceration extraction. The microencapsulation powder making consist of homogenization, microencapsulation by spray dryer, microencapsulation powder quality test by knowing the water content, water activities value, solubility test value and microencapsulation powder tannin test. The application to the mackarel fish by total plate count by using dosage of 1.4%, 2.1%, 2.8%, 3.5%, and 4.2% at the day 1, 2, and 3. Measured the water content of treated mackarel fish, and the best day and dosage and done protein content test by Kjeldahl method.
Experimental data showed that the microencapsulation of cucumber tree leaves water extract by using maltodextrin layer and dried by using spray dryer gibing god microencapsulation powder quality, with water activity value of 0.453, test value % of solved substance of 99.9998%, and the water content value of 6.726%. The microencapsulation of cucumber tree leaves water extract of 4.2% of day -0, showed the best abilities in inhibiting the total bacteria of 0.79x105 while at dosage of 4.2% of day -1 of 14.55x105 and do not fulfill the TPC value standard of fresh fish. And the presence of microencapsulation powder giving at the fish prevent the protein damage.
