Abstract
ABSTRAK
Telah dilakukan penelitian tentang pengaruh umur buah nanas dan konsentrasi ekstrak kasar enzim bromelin pada pembuatan Virgin Coconut Oil dari buah kelapa typical (cocos nucifera L.). Penelitian ini bertujuan untuk mengetahui pengaruh umur buah nanas dan konsentrasi dalam menghasilkan rendemen terbanyak serta mengetahui kualitas VCO yang dihasilkan dengan parameter kadar air dan angka peroksida.
Metode penelitian ini meliputi: preparasi sampel ekstrak kasar enzim bromelin dari buah nanas, pembuatan krim santan dengan buah kelapa typical (Cocos nucifera L.), pembuatan VCO secara fermentatif dengan variasi umur buah nanas, pembuatan VCO secara fermentatif dengan variasi konsentrasi ekstrak kasar enzim bromelin, penentuan nilai rendemen, uji kualitas VCO dan uji statistik.
Hasil penelitian menunjukkan bahwa umur buah nanas dan konsentrasi ekstrak kasar enzim bromelin menghasilkan VCO terbaik pada buah nanas yang berumur 3 bulan dengan konsentrasi 3,85 % rendemen yang dihasilkan sebanyak 21,14 %. Hasil penelitian pada perlakuan terbaik menunjukkan bahwa rerata kadar air dan angka peroksida VCO, pada buah nanas yang berumur 3 bulan adalah 0,33 % dan 0,03 meq/kg; 4 bulan adalah 0,12 % dan 0,03 meq/kg; 5 bulan adalah 0,33 % dan 0,03 meq/kg. Uji statistik menunjukan bahwa pada pemberian konsentrasi ekstrak kasar enzim bromelin berpengaruh sangat nyata (p < 0,01) pada rendemen yang dihasilkan di antara konsentrasi lain.
ABSTRACT
The research on the effect of pineapple’s age and concentration of crude extract Bromelin enzyme on the production of Virgin Coconut Oil (VCO) from typical coconut has been conducted. The aim of the research is to study the effect of pineapple’s age and the concentration of raw extract bromelin enzyme on the making of VCO through its percentage of yield and quality including water content and peroxide number.
Several steps were covered in the research included the preparation of raw extract of Bromelin enzyme, the making of coconut oil cream from typical coconut (Cocos nucifera L.), the fermentative production of VCO using variation of the enzyme concentration, the determination of yield percentage and quality of VCO using measurement of water content and peroxide number followed by statistical analysis.
The research showed that pineapples’s age and the concentration of crude extract Bromelin enzyme have significant effect to the VCO production. The optimum yield of VCO (21.14% yield) was obtained from 3 month old pineapple and 3.85% of crude enzyme concentration. The quality (water content and peroxide number) of VCO generated using the best treatment parameter was obtained as follows, 3 month old pineapple = 0.33% and 0.03meq/kg, 4 month old pineapple = 0.12% and 0.03 meq/kg, 5 month old pineapple =0.33% and 0.03/kg. Statistical analysis also showed that the concentration of crude enzyme has significantly effect (p<0.01) to the VCO yielded.
