Abstract
INDONESIA:
Allah SWT menciptakan manusia akal untuk berfikir dan lingkungan yang baik untuk menunjang hidup manusia di alam ini. Maka dari itu, manusia harus menjaga dan melestarikan untuk kelangsungan hidup manusia di dunia ini. Pernyataan ini diperkuat dengan turunnya surat Al-Qur’an yaitu Surat Al-A’raf ayat 56 yang isinya melarang manusia untuk merusak bumi dan menjaga kelestariannya. Arsitektur ekologi adalah salah satu upaya untuk melestarikan alam dalam bidang arsitektur. Arsitektur ekologi diangkat sebagai tema dalam Perancangan Sekolah Tinggi Tata Boga Spesialis Vegetarian Di Kota Malang yang mempunyai hubungan dan latar belakang yang kuat dengan fungsi dan keadaan kota malang saat ini. Karena Kota Malang menjadi kota transisi yang padat dengan pembangunan bangunan publik akibatnya area hijau banyak berkurang. Alasan merancang sekolah tinggi tata boga ini dikarenakan banyak mahasiswa yang ingin masuk dalam jurusan tata boga tapi kuotanya sedikit sehingga perlu dirancang lembaga sekolah tinggi untuk menampung minat mahasiswa-mahasiswa tersebut. Bahan dasar memasaknya mengunakan bahan nabati agar bisa menjaga pola makan yang sehat bukan junkfood dan terhidar dari penyakit yang umumnya berasal dari makanan hewani seperti stoke, hipertensi, kolesterol darah tinggi dan lain-lain karena sekitar 2900 warga malang terjangkit penyakit tersebut. Islam juga mengajarkan manusia untuk memakan makanan yang halal lagi baik seperti dalam surat Al-Maidah ayat 88.
Metode perancangan yang digunakan adalah berawal dari isu dan cara untuk mengatasi isu tersebut kemudianmelakukan pengumpulan data dan observasi. Dari data-data tersebut dipilih untuk dijadikan pertimbangan dalam analisis dalam perancangan yang meliputi analisis tapak, fungsi, aktifitas, pengguna, ruang, bentuk, utilitas dan struktur. Kemudian setelah proses analisis terdapat perhitungan dari poin-poin prinsip tema yang prosentase poin plus lebih banyak akan dijadikan sebagai konsep perancangan. konsep perancangan ini didalamnya berisikan konsep bentuk, konsep tapak berdasarkan prinsip ekologi, konsep utilitas dan konsep struktur perancangan. Konsep perancangan ini dijadikan pedoman hasil akhir perancangan sekolah tinggi tata boga spesialis vegetarian.
Hasil perancangan sekolah tinggi tata boga spesialis vegetarian di kota malang dengan tema ekologi arsitektur dapat menjadi perancangan yang perduli dengan alam, serta mengedepankan tiga aspek kehidupan yakni manusia, lingkungan dan bangunan yang dilebur sehingga akan menghasilkan rancangan yang ramah lingkungan dan dapat memberikan keuntungan bagi ketiganya dan dapat mengurangi kerusakan alam dan global warming.
ENGLISH:
Allah SWT creates an intelligence and good environment for human being to sustain their life in this universe. Thus, as a human, we have to keep and preserve our environment for our life force in this world. This statement is also stated in Al-Qur’an Surah Al-A’rof verse 56 clearly mentioning that human are prohibited to destroy the world, we have to keep its existence. In this case, ecological architecture is one of the ways to preserve our nature in the field of architecture. This topic is taken as the theme of this present thesis untitled “Perancangan Sekolah Tinggi Tata Boga Spesialis Vegetarian Di Kota Malang”. The researcher believed that this idea has a strong relation and functional background to the situation and condition of Malang today. As we know, Malang is kind of transitional crowded city which has continually grown up its public building development, consequently, it decreases the number of green areas we have. Regarding to this issue, the researcher proposes a design building for culinary college. Nowadays, many students who want to continue their study in food sciences are limited due to its quota. Therefore, constructing new culinary college can be a solution to accommodate students’ interest. Then, for food ingredient, it will use vegetable substance in order to keep our healthy food behavior instead of consuming any junk food. Moreover, we can keep away from any diseases that are generally from animal meat such as stroke, hypertension, high blood pressure, etc. As many Malang citizens around 2900 people have to survive for these diseases. In addition, Islam also teaches us to eat good and halal food as stated in Surah Al-Maidah verse 88
The design method that is used is started from the issue and the way how to cope the issue, then, collecting the data and doing an observation. From the data collection, it is chosen as the consideration for design analysis that covers site analysis, functional analysis, activities analysis, usage analysis, room analysis, utility and structure analysis. After having analysis on those elements, the researcher can calculate the point of each element. Then, the researcher can determine the design concept based on one element chosen that has the highest and greatest value among those elements. This design concept contains form design, site design coming from ecological principle, utility design, and design structure concept. Besides, this design concept is used to be a handbook for final design of culinary college for vegetarian specialist.
The result design of culinary college for vegetarian specialist in Malang in theme of ecological architecture can be a design which cares the nature, also make its three aspects of life as main considerations, they are human, environment, and building which were melted and results a nature friendly design that gives benefit toward those aspects. In addition, it can decrease nature destroying and global warming.
