Abstract
INDONESIA:
Minyak kelapa murni (VCO) merupakan salah satu hasil olahan dari buah kelapa. Penggunakan daun pepaya pada pembuatan minyak kelapa selain lebih murah dan mudah didapat, karena dalam daun pepaya mengandung enzim papain yang mampu memecah santan menjadi minyak. Sedangkan lama pemeraman diharapkan dapat memberi waktu yang cukup untuk pemisahan fraksi minyak dari sistem emulsi santan.
Penelitian ini dilaksanakan di Laboratorium Biokimia Jurusan Biologi Fakultas Sains dan Teknologi Universitas Islam Negeri Maulana Malik Ibrahim Malang. Analisis yang digunakan untuk mengetahui kualitas minyak kelapa adalah kadar air, bilangan peroksida, asam lemak bebas, viskositas, organoleptik dan pengukuran rendemen. Rancangan penelitian yang digunakan adalah Rancangan Acak Kelompok (RAK) dengan 2 faktor dan menggunakan 3 ulangan. Faktor pertama adalah konsentrasi (15%, 30%, dan 45%), sedangkan faktor kedua adalah lama pemeraman (15 jam, 20 jam, dan 25 jam) sehingga terdapat 9 perlakuan. Data yang diperoleh dianalisis dengan menggunakan Analysis of Varian (ANOVA) apabila terdapat pengharuh yang nyata maka dilakukan uji lanjut dengan uji Tukey 5%.
Konsentrasi ekstrak daun pepaya (Carica papaya L.) dan lama pemeraman berpengaruh terhadap kualitas minyak kelapa (Cocos nucefera L.) yang diproses secara enzimatis. Kualitas minyak kelapa meliputi kadar air, bilangan peroksida, asam lemak bebas, viskositas, dan uji organoleptik. Konsentrasi ekstrak daun pepaya dan lama pemeraman juga berpengaruh terhadap rendemen atau produksi minyak kelapa. Dari hasil penelitian menunjukkan bahwa perlakuan K3P3 (konsentrasi ekstrak daun pepaya 45% dan lama pemeraman 25 jam) menghasilkan kualitas minyak kelapa yang baik dan memenuhi SNI.

Virgin coconut oil (VCO) is one product from coconuts. The usage of papaya leave in making coconut oil not only cheaper and easier to obtain but also the leaves of papaya contains papain enzymes that capable to break the coconut milk into oil. While long ripening is expected to provide sufficient time for the separation of oil fractions from coconut milk emulsion system.
This research was conducted at the Laboratory of Biochemistry Department of Biology, Faculty of Science and Technology State Islamic University of Maulana Malik Ibrahim Malang. The analysis which was used to determine the quality of oil was water content, peroxide value, free fatty acids, viscosity, organoleptic and yield measurement. The reasearch design using block randomized design (BRD) with two factors and 3 replications. The first factor was the concentration (15%, 30% and 45%), while the second factor was the length of curing (15 hours, 20 hours, and 25 hours) so that there were 9 treatments. Data were analyzed using Analysis of Variants (ANOVA) if there was a real effect would conduct a further test by Tukey's test 5%.
The concentration of papaya extract (Carica papaya L.) and long curing had effect in quality of coconut oil (Cocos nucefera L.) which processed enzymatically. The quality of coconut oil include water content, peroxide value, free fatty acids, viscosity, and organoleptic tests. The concentration of papaya leaf extract and long curing also had the effect to yield or production of palm oil. The results showed that the treatment K3P3 (papaya leaf extract concentration 45% and time curing 25 hours) to produce the best quality of coconut oil and SNI requirement.
