Abstract

ABSTRAK

Proses pemurnian minyak perlu dilakukan untuk meningkatkan kualitas dari minyak ikan hasil samping industri pengalengan. Penelitian ini bertujuan untuk mengetahui pengaruh proses degumming, refining, dan bleaching menggunakan karbon aktif polong kelor (Moringa oleifera., Lamk) terhadap komposisi asam lemak jenuh dalam minyak ikan hasil samping pengalengan ikan dan mengetahui deskripsi struktur pori dan luas permukaan spesifik karbon aktif polong kelor.

Penelitian ini meliputi: (1) Proses pemurnian minyak ikan hasil samping pengalengan meliputi proses degumming dengan menambahkan larutan NaCl 8 %, refining menggunakan metode netralisasi dengan menambahkan NaOH 16 % dan bleaching menggunakan karbon aktif polong buah kelor teraktivasi NaCl 30 % dengan pirolisis pada suhu 800 oC selama 30 menit. (2) Analisis asam lemak jenuh dengan menggunakan GC-MS. (3) Analisis permukaan karbon aktif polong kelor menggunakan SEM. (4) Penentuan luas permukaan spesifik dengan metode analisis stereologi dari citra SEM.

Hasil penelitian menunjukkan minyak ikan hasil proses degumming mengalami peningkatan % area relatif asam lemak jenuh sebesar 0,28 %. Minyak ikan hasil proses refining mengalami penurunan % area relatif asam lemak jenuh sebesar 2,65 %. Minyak ikan hasil proses bleaching mengalami peningkatan % area relatif asam lemak jenuh sebesar 1,51 %. Struktur pori karbon aktif polong kelor yang diamati dengan SEM berupa pori yang memiliki rongga yang panjang dan dalam. Pori karbon aktif termasuk makropori dengan diameter pori 2-25 µm. Luas permukaan spesifik karbon aktif dengan analisis stereologi sebesar 1,6943; 0,7796 dan 0,0269 m2/g.

ABSTRACT

Oil purification process needs to be done to improve the quality of the fish oil by products of fish canning industry. This study aimed to determine the influence of the process of degumming, refining, and bleaching using activated carbon moringa pods (Moringa oleifera., Lamk) against the composition of saturated fatty acids in fish oil by products of fish canning and knowing descriptions of pore structure and specific surface area of activated carbon moringa pods.

Study include : (1) The process of fish oil purification by products fish canning include degumming process by adding 8 % NaCl solution, refining using neutralization method by adding 16 % NaOH and bleaching using activated carbon activated moringa fruit pods NaCl 30 % by pyrolysis at temperatures of 800 °C for 30 minutes. (2) Analysis of saturated fatty acids using GC-MS. (3) Analysis of moringa pods activated carbon surfaces using SEM. (4) Determination of the specific surface area by analysis methods stereologi from SEM image.

The results showed fish oil degumming process results in an increase % saturated fatty acids relative area of 0.28 %. Fish oil refining process results in decreased % saturated fatty acids relative area of 2.65 %. Fish oil bleaching process results in an increase % saturated fatty acids relative area of 1.51 %. Pore structure of activated carbon moringa pods were observed by SEM in the form of pores that have a long and deep cavity. Activated carbon pore including macropore with pore diameters of 2-25 μm. The specific surface area of activated carbon with stereologi analysis of 1.6943; 0.7796 and 0.0269 m2/g.
