Abstract

ABSTRAK

Asam lemak ω-3 merupakan asam lemak yang penting bagi kesehatan. Asam lemak ω-3 banyak terkandung dalam minyak ikan. Penelitian ini dilakukan dengan tujuan untuk: (1) Mengetahui asam lemak omega-3 yang terkandung dalam minyak ikan. (2) Mengetahui pengaruh proses degumming, Netralisasi dan Bleaching dengan karbon aktif biji kelor (Moringa oleifera. Lamk) teraktivasi NaCl 30 % pada pengolahan minyak ikan limbah pengalengan ikan terhadap komposisi asam lemak omega-3 minyak ikan limbah pengalengan ikan.

Tahapan penelitian ini meliputi (1) analisis kadar air biji kelor, (2) pembuatan karbon aktif biji kelor dengan aktivasi menggunakan NaCl 30 % dan karbonisasi dalam fluidized bed reactor temperatur 800 0C selama 30 menit dalam medium gas N2 kecepatan alir 200mL/menit, (3) pemurniam minyak ikan meliputi proses degumming menggunakan NaCl 8 %, netralisasi dengan NaOH 16 % dan bleaching dengan karbon aktif biji kelor, (4) analisis asam lemak ω-3 dengan GC-MS QP2010S SHIMADZU.

Hasil penelitian menunjukkan bahwa kandungan asam lemak ω-3 dalam minyak ikan limbah pengalengan ikan adalah asam linolenat, asam eikosapentaenoat, asam arakidonat. Proses degumming mampu menaikkan area relatif asam lemak ω-3 sebesar 73,52 %. Proses netralisasi terjadi penurunan area relatif asam lemak ω-3 sebesar 24,28 %. Proses bleaching dengan karbon aktif biji kelor (Moringa oleifera. Lamk) teraktivasi NaCl 30 % mampu menaikkan area relatif asam lemak ω-3 sebesar
86,86 %.

ABSTRACT

Omega-3 fatty acids are considered essential fatty acids which play an essential role in human health. Fish oils are rich of omega-3 fatty acid. This research is conducted for several purposes: (1) knowing omega-3 fatty acids which are contained in fish oil. (2) knowing the effect of Degumming, Neutralization and Bleaching processes with Moringa oleifera seed active carbon activated by 30 % of NaCl on fish oil processing from fish canning wastes towards omega-3 fatty acids of fish oil from fish canning waste.

The steps of this research involve: (1) Analysis of moisture content of Moringa oleifera seed, (2) the production of active carbon of Moringa oleifera. Lamk seed by using 30 % of NaCl and the carbonization of dal fluidized bed reactor in the temperature 8000 C for 30 minutes in N2 medium gas with flowrate 200 mL/min., (3) fish oil purification involves the process of degumming by using NaCl 80 %, neutralization by NaOH 16 % and bleaching by activated carbon of Moringa oleifera seed, (4) analysis of omega-3 fatty acids by GC-MS QP2010S SHIMADZU.

The reseach results show that the content of omega 3 fatty acids of fish oil from fish canning waste are Linolenic acid, Eicosapentaenoic acid, and Arachidonic acid. The degumming process is able to increase relative area of omega-3 fatty acid for 73,5 %. Neutralization process has decreasing of relative area of omega-3 fatty acid for 24, 28 %. Bleaching process with activated carbon of Moringa oleifera. Lamk seed by NaCl 30 % is able to increase relative area of omega-3 fatty acid for 86, 86 %.
