Abstract
ABSTRACT
Rastrelliger has high protein level. Since it is deteriorate easily in room temperature, there should be a natural preservative that can be used to maintain its freshness; Bilimbi leaves powder. It contains flavonoid and tannin, which is antibacterial, to help preserve the fish. The aim of this study is to determine the effect of concentration variation and duration of application of bilimbi leaves powder as fish preservative, which is seen from chemistry, microbiology, and physical characteristics of the subject.
This study was started from determining the best concentration of leaves powder. It was 10%, 20%, 30% and 80% of the fish weight, which was seen from the smallest total plate count. The duration was varied from 2, 10, 18, and 26 hours with the best concentration from the previous analysis, and it was determined by the TPC found. Fish with the best duration and concentration was further analyzed by using several methods. First, Kjedahl method was used to analyze the water amount, ash amount, and crude protein amount. Meanwhile, GC and organoleptic method was used to determine DHA amount. This analysis was done within four days, i.e., day 0, 1, 2, 3, and 4. The data found was further analyzed through ANOVA two way and ANOVA one way, and was continued to BNT test.
The result of the study showed that the best concentration of bilimbi leaves powder was 30% concentration and two hours duration of application, which resulted on smaller total plate count 0,0012 x108- 2,45x108 cfu/gr than the fresh fish (control). The water amount was 67,86-72,51% smaller than the control fish. Protein amount is 19,2-8,78%, which was smaller than the control fish. 2,682% of DHA amount was found, and organoleptic value was downgraded from day to day. According to ANOVA two way and one way test, all of tretments have an influence which is significant.

Ikan kembung (Rastrellinger brachysoma) mempunyai kandungan protein tinggi, ikan ini cepat sekali mengalami pembusukan pada suhu kamar. Sehingga perlu adanya alternatif pengawet alami yaitu dengan mengunakan serbuk daun belimbing wuluh (Averrhoa bilimbi L.). Daun belimbing wuluh mengandung flavonoid dan tanin yang dapat bersifat sebagai antibakteri yang berperan sebagai pengawet ikan. Tujuan penelitian ini untuk mengetahui pengaruh variasi konsentrasi dan lama pelumuran serbuk daun belimbing wuluh sebagai pengawet ikan dilihat dari sifat kimia, mikrobiologi dan sifat fisik ikan hasil perlakuan.
Penelitian ini dimulai dengan menentukan konsentrasi terbaik serbuk daun belimbing wuluh dengan konsentrasi 10%, 20%, 30% dan 80% dari berat ikan, dilihat dari nilai total bakteri (TPC) yang terkecil. Penentuan lama waktu pelumuran dengan variasi waktu 2, 10, 18 dan 26 jam dengan konsentrasi terbaik dari analisis sebelumnya, dilihat dari nilai total bakteri yang terkecil. Ikan yang mempunyai konsentrasi dan lama pelumuran terbaik dianalisis lebih lanjut meliputi kadar air, kadar abu, kadar protein kasar dengan metode Kjeldahl, kadar DHA dengan metode GC dan organoleptik. Analisis ini dilakukan selama 4 hari yaitu pada hari ke-0, 1, 2, 3 dan 4. Data yang diperoleh dianalisis ANOVA two way dan ANOVA one way dilanjutkan dengan uji BNT. Uji organoleptik menggunakan uji Friedmen.
Hasil penelitian menunjukkan bahwa konsentrasi terbaik serbuk daun belimbing wuluh yaitu konsentrasi 30% dan waktu pelumuran 2 jam dilihat dari nilai total bakteri sebesar 0,0012x108-2,45x108 cfu/gr yang lebih kecil dari ikan segar (kontrol). Nilai kadar air sebesar 67, 86-72, 51% lebih kecil dari ikan segar (kontrol), kadar abu sebesar 3,045-4,9% lebih besar dari ikan segar (kontrol), kadar protein sebesar 19,2-8,78% lebih kecil dari ikan segar (kontrol), kadar DHA sebesar 2,682% dan nilai organoleptik semakin hari semakin menurun. Berdasarkan uji ANOVA two way dan one way menyatakan bahwa semua perlakuan memiliki pengaruh yang signifikan.
