Abstract
ABSTRAK
Telah dilakukan penelitian tentang pengolahan minyak ikan hasil samping industri pengalengan ikan menggunakan karbon aktif biji kelor dan serbuk gergaji kayu jati. Minyak ikan tersebut sebagian besar masih dalam kualitas rendah, mengandung pengotor berupa zat warna organik ataupun anorganik, dan komponen pengotor lain meliputi, logam berat, produk hasil oksidasi lemak, aldehida, keton, asam lemak bebas (FFA) dan peroksida yang mempengaruhi aroma dan citarasa minyak menjadi tengik. Penelitian ini bertujuan untuk mengetahui berapakah nilai asam lemak bebas (FFA) dan peroksida tiap-tiap pengolahan minyak ikan dengan menggunakan karbon aktif biji kelor dan serbuk gergaji kayu jati.
Penelitian ini meliputi: Analisis kadar air biji kelor dan serbuk gergaji kayu jati; Pembuatan kedua karbon aktif terdiri dari tiga tahap yaitu dehidrasi, aktivasi kimia dengan larutan NaCl 30 % dan karbonisasi dalam reaktor fluida pada suhu 800 oC selama 30 menit dalam medium gas N2 dengan kecepatan alir 200 ml/menit; Pengolahan minyak ikan meliputi: proses degumming, netralisasi, dan bleaching; analisis minyak ikan meliputi: analisis kadar asam lemak bebas (FFA) dengan metode titrasi asam basa, analisis kadar peroksida dengan metode iodometri yang dilakukan pada setiap tahapan proses pengolahan.
Hasil penelitian menunjukkan bahwa asam lemak bebas mengalami penurunan tiap tahap pengolahan dari minyak ikan awal sebelum diproses pengolahan, degumming, netralisasi dan bleaching dengan biji kelor dan karbon aktif serbuk gergaji kayu jati berturut-turut yaitu: 2,48%; 2,29%; 0,172%; 0,162%; 0,157 % dengan persentase penurunan asam lemak bebas (FFA) terbesar pada proses netralisasi sebesar 85,40 %. Hasil angka peroksida juga mengalami penurunan, berikut penurunan pada tiap tahap pengolahan dari minyak ikan awal sebelum diproses pengolahan, degumming, netralisasi dan bleaching dengan biji kelor dan karbon aktif serbuk gergaji kayu jati berturut-turut yaitu: 11,43 meq/kg; 5,377 meq/kg; 3,286 meq/kg; 1,396 meq/kg; dan 1,096 meq/kg dengan persentase penurunan angka peroksida terbesar pada proses degumming sebesar 53,01 %.
ABSTRACT
The research had been done about the processing of fish oil from the residue product of fish packing industry using active carbon of the seed of moringa oliefera.,Lamk and wood sawdust of tectona grandis.,LF. Generally, fish oil is obtained from the residue product of fish packing industry, mostly still in low quality containing impurities in the form of organic or inorganic dyes, and other impurity components including, heavy metals, products of fat oxidation, aldehydes, ketones, free fatty acids (FFA) and peroxide value which affects the aroma and flavor of oil becoming rancid.
The research includes: analysis water content of moringa oliefera.,Lamk and wood sawdust of tectona grandis.,LF; making activated carbon from of moringa oliefera.,Lamk and wood sawdust of tectona grandis.,LF The making of both activate carbon consists of three stages: dehydration, chemical activation with 30% NaCl solution and carbonization temperature in the reactor fluid at 800 oC for 30 minutes in N2 gas medium; processing which includes the process of degumming, neutralization and methods of mixing activated carbon with know oil bleaching by adsorption using activated carbon moringa oliefera.,Lamk and wood sawdust of tectona grandis.,LF; anysis of the fish oil from the residue product of fish packing industry and the results of each stage of processing are analyzed free fatty acid (FFA) with acid-base titration method and the peroxide value by iodometric method;
The results showed the decreased free fatty acids each stage of processing from the beginning of unprocessed fish oil to the processing, degumming, neutralization and bleaching with activated carbon moringa oliefera.,Lamk and wood sawdust of tectona grandis.,LF respectively is: 2.48%, 2.29%, 0.172%, 0.162%, 0.157% with the largest percentage reduction in free fatty acid (FFA), in the process of neutralization by 85.40%. The of results peroxide value also decreasedeach stage of processing from the beginning of unprocessed fish oil to the processing, degumming, neutralization and bleaching with activated carbon moringa oliefera.,Lamk and wood sawdust of tectona grandis.,LF respectively is: 11.43 meq / kg; 5.377 meq / kg; 3.286 meq / kg; 1.396 meq / kg, and 1.096 meq / kg with the largest percentage reduction of peroxide value of 53.01 % in the process by degumming.
