Abstract
INDONESIA :
Pengklasifikasian daging sapi dan daging babi berdasarkan rasa dapat dilakukan dengan menggunakanlidah elektronik berbasis membran lipid. Lidah elektronik yang dibuat terdiri atas 16 membran lipid yang berdasarkan pada konsep selektifitas global sebagai sensor, interface dan software akuisisi data yang dibangun menggunakan aplikasi LabVIEW. Hasil respon array sensor diolah menggunakan analisis multivariat Principle Component Analysis (PCA) danCluster Analysis(CA) untuk mengklasifikasikan pola rasa daging. Hasil pengolahan data PCA diperoleh nilai proporsi kumulatif PC1, PC2 dan PC3 sebesar 97.4% yang mewakili kovarian seluruh data. Hasil klasifikasi daging sapi dan daging babi menunjukkan hasil yang sangat baik. Hasil analisis CA dengan metode single linkage diperoleh ketepatan akurasi sebesar 100% dengan jarak antar centroid klaster 355.091 dalam mengklasifikasikan daging sapi dan daging babi.

Classification of beef and pork based on flavor can be done by using electronic tongue with lipid membrane-based. Electronic tongue is made by 16 lipid membranes based on global selectivity concept as sensor, interface and data acquisitionsoftware which is built by using LabVIEW application. The result from array sensor is managed using multivariantanalysis, they arePrinciple Component Analysis (PCA)and Cluster Analysis (CA) to classify the flavor pattern of meat. The result of PCA shows the accumulation of proportion value PC1, PC2 and PC3 is 97.4% which is representative all of co-variant data.Classification result of beef and pork shows a very good result.CA analysis result with single linkage method shows the precision accuracy 100% with distance between centroid cluster 355.091 in classifying beef and pork.
